Ingredients

¾ cup lukewarm water

1 teaspoon active dry yeast or instant yeast

2 cups unbleached all-purpose flour, plus more as needed

1½ teaspoons salt

Directions

  1. Pour the lukewarm water into a large mixing bowl. Sprinkle the yeast over the water and let it sit for about 1 minute to bloom, then stir gently to dissolve.

  2. Add the flour and salt to the yeast mixture. Stir with a wooden spoon until the ingredients come together and form a shaggy dough. The dough should be slightly sticky.

  3. Transfer the dough to a lightly floured work surface and knead for 8 to 10 minutes, adding a bit more flour as needed if the dough feels too sticky. The dough should become smooth and elastic.

  4. Shape the dough into a ball and place it in a lightly oiled or lightly floured bowl. Cover the bowl with plastic wrap or a damp kitchen towel.

  5. Let the dough rise at room temperature for about 1 to 1.5 hours, or until it has roughly doubled in size and shows small bubbles on the surface.

  6. Turn the dough out onto a work surface. Divide it in half for two pizzas, or use it whole for one large pizza. Shape each portion gently into a ball or flat disk and proceed with your chosen pizza recipe.
