Ingredients
1 can (12 ounces) canned tuna in water, drained
2 tablespoons fresh lime juice
1/2 cup onion, finely diced
1/4 cup fresh tomatoes, diced
1/2 cup apple, diced
1/4 cup celery, finely diced
1/4 teaspoon black pepper
6 slices whole grain bread
1/4 cup fresh parsley or cilantro, chopped (optional)
1 tablespoon jalapeño peppers, diced (optional)
3 slices pasteurized process American cheese
6 slices fresh tomato (optional, for topping)
6 leaves lettuce (optional, for topping)
Directions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the drained tuna, lime juice, diced onion, diced tomatoes, diced apple, diced celery, and black pepper. Stir gently until all ingredients are evenly distributed. If using parsley and jalapeños, fold them in now.
Place the bread slices on a baking sheet and toast in the oven for 2 to 3 minutes until lightly golden and crisp.
Remove the toasted bread from the oven and arrange all 6 slices on the baking sheet. Divide the tuna mixture evenly among the bread slices, mounding it slightly on top of each.
Cut the cheese slices in half. Place one half-slice of cheese on top of the tuna mixture on each bread slice.
Return the baking sheet to the oven and bake for 3 to 5 minutes, until the cheese is melted and bubbly.
Remove from the oven and top each sandwich with a fresh tomato slice and a lettuce leaf, if desired. Serve immediately while warm.
