Chinese Steamed Eggs with Minced Pork

Ingredients
5 oz Ground pork
3 Eggs
1 tbsp Oyster sauce
1 tbsp Cornstarch
½ tsp Salt
¼ tsp White pepper
¾ cup Water
1 tsp Vegetable oil
1 stalk Green onion, chopped
Directions
In a small bowl, whisk together the 3 eggs with ¾ cup of water until well blended, then stir in the oyster sauce, cornstarch, salt, and white pepper. Set the egg mixture aside.
Heat 1 tsp of oil in a skillet over medium-high heat. Add the ground pork and cook, breaking it apart with a spoon, until it reaches an internal temperature of 160°F and shows no pink, about 4–5 minutes. Drain off any excess fat.
Divide the cooked pork evenly among 4 individual shallow bowls or ramekins suitable for steaming.
Gently pour the egg mixture over the pork in each bowl, dividing it equally, and stir gently to combine.
Bring water to a boil in a steamer pot. Carefully arrange the bowls in the steamer basket in a single layer (stack carefully if needed). Cover and steam over medium heat for 10–12 minutes, until the eggs are set but still silky and a knife inserted near the center comes out mostly clean.
Remove the bowls carefully using tongs and garnish with the chopped green onion. Serve hot.
