4 Garlic cloves, chopped
1 Large tomato, cored and finely chopped
½ teaspoon Cayenne pepper
1½ teaspoons Kosher salt
1 teaspoon Sugar
½ teaspoon Garam masala
1 pound Shrimp, peeled and deveined with tails intact
½ cup Heavy cream
2 tablespoons Fresh cilantro, finely chopped
Directions
Heat the canola oil in a large skillet or shallow cooking pan over medium-high heat.
Once the oil is shimmering, add the chopped garlic and cook for about 1 minute, stirring frequently, until fragrant and softened.
Stir in the ground almonds and cook for 2 minutes, stirring constantly, to lightly toast them and deepen their flavor.
Add the finely chopped tomato and cook for 3 to 4 minutes, stirring occasionally, until the tomato begins to break down and release its juices.
Sprinkle the cayenne pepper, kosher salt, sugar, and garam masala over the tomato mixture. Stir well to combine all the spices evenly.
Pour in the heavy cream and stir until the sauce is smooth and well combined. Simmer gently for 2 minutes.
Add the peeled and deveined shrimp to the skillet, stirring gently to coat them in the curry sauce.
Cook for 4 to 5 minutes, stirring occasionally, until the shrimp are opaque and firm to the touch, with an internal temperature reaching 145°F. Do not overcook.
Remove from heat and garnish with the fresh chopped cilantro. Serve immediately over steamed rice or with warm naan bread.
