Ingredients
1 cup (2 sticks) unsalted butter, melted
1/2 cup granulated sugar
1 cup packed light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 1/2 cups chopped peanut butter cups (such as Reese's)
1 cup crushed graham cracker pieces
1 1/2 cups mini marshmallows
Cooking spray
Directions
Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, allowing the paper to overhang on two opposite sides for easy removal later. Coat the parchment with cooking spray to prevent sticking.
In a large mixing bowl, combine the melted butter with the granulated sugar and packed brown sugar. Whisk until the mixture is smooth and well blended, about 2 minutes. The sugar should dissolve into the butter.
Add the eggs and vanilla extract to the butter-sugar mixture. Whisk until all ingredients are thoroughly combined and the mixture is smooth.
Gently fold in the flour and salt, stirring just until the dry ingredients are incorporated into the wet mixture. Do not overmix. Stir in 1 cup of the chopped peanut butter cups and 1/2 cup of the crushed graham cracker pieces.
Pour the batter into the prepared baking pan and smooth the top with a spatula for even baking.
Bake for 30 to 35 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Do not overbake.
Remove the pan from the oven. Immediately top the warm bars with the remaining 1/2 cup of chopped peanut butter cups, the remaining 1/2 cup of crushed graham cracker pieces, and all of the mini marshmallows, distributing them evenly across the surface.
Switch your oven to the broil setting. Return the pan to the oven, positioning it 3 to 4 inches from the broiler heating element. Broil for 1 to 2 minutes, watching carefully, until the marshmallows are toasted to a light golden brown. Remove immediately to prevent burning.
Remove the pan from the oven and allow the bars to cool completely at room temperature in the pan before slicing. Once fully cooled, use the parchment paper overhang to lift the entire sheet from the pan, then cut into 16 equal squares. Serve and enjoy.
