Nettle Tea Mojitos (Alcohol-Free Mocktails)

Ingredients
2 Nettle tea bags
½ cup Hot water
1 Lime
½ teaspoon Raw honey
1 cup Crushed ice
½ cup Fresh mint leaves
⅓ cup Sparkling water or cold water
Fresh mint leaves for garnish
Directions
Heat the water to just below boiling (around 200°F or 93°C). Pour the hot water into a teapot or mug and steep the 2 nettle tea bags for 3–4 minutes until the tea is fully brewed and deep green in color. Remove the tea bags and set the brewed nettle tea aside to cool slightly.
Cut the lime in half. Juice one half into a cocktail shaker or mixing glass, and cut the other half into 2 thin wedges for garnish.
Place the fresh mint leaves in the shaker or glass. Using a muddler or the back of a spoon, gently press and twist the mint leaves to release their oils and fragrance, being careful not to shred them.
Add the raw honey to the shaker with the mint and lime juice. Stir well to dissolve the honey and combine the flavors.
Pour half of the cooled nettle tea into the shaker. Add half of the crushed ice and stir gently to chill the mixture.
Divide the remaining crushed ice between two glasses. Pour the nettle tea mixture evenly into both glasses.
Top each glass with half of the sparkling water, pouring slowly to preserve the carbonation. Stir gently to combine.
Garnish each glass with a fresh mint sprig and a lime wedge. Serve immediately and enjoy.
