Ingredients

1 medium zucchini, sliced into rounds

1 1/2 cups corn kernels (fresh or frozen)

2 medium tomatoes, diced

2 tablespoons fresh lime juice

1/2 tablespoon olive oil

1/2 teaspoon fresh oregano, finely chopped

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning food preparation.

  2. Slice the zucchini into thin rounds about 1/4 inch thick. Cut the tomatoes into bite-sized dice and measure out the corn kernels.

  3. Fill a pot with about 1 inch of water and bring to a boil. Place a steamer basket over the water and arrange the zucchini and corn in the basket. Steam for 4–5 minutes until the vegetables are tender but still bright and slightly crisp.

  4. Carefully drain the steamed vegetables in a colander and transfer to a large bowl. Allow them to cool to room temperature, about 10 minutes.

  5. In a small bowl, whisk together the fresh lime juice and olive oil until well combined.

  6. Stir the finely chopped fresh oregano into the lime juice and oil mixture.

  7. Pour the lime-oregano dressing over the cooled vegetables, including the diced tomatoes. Gently toss until all vegetables are evenly coated with the dressing.

  8. Serve immediately or refrigerate until ready to serve. The flavors will deepen slightly as it sits.
