2 boneless, skinless chicken breast halves

2 garlic cloves, minced

½ lemon juice of ½ lemon

¼ cup olive oil

1 teaspoon fresh parsley, minced

1 teaspoon fresh thyme, minced

salt to taste

black pepper to taste

fresh parsley and thyme for garnish

lemon wedges for serving

Directions

  1. Pat the chicken breast halves dry and trim any excess fat or connective tissue. Place them in a shallow bowl or zip-top bag.

  2. In a small bowl, whisk together the minced garlic, lemon juice, olive oil, parsley, thyme, salt, and pepper to create the marinade.

  3. Pour the marinade over the chicken breasts, making sure they are evenly coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

  4. Preheat your grill to medium-high heat for 10–15 minutes until it reaches approximately 400°F.

  5. Remove the chicken from the marinade, allowing excess liquid to drip off. Place the chicken breasts on the preheated grill.

  6. Grill the chicken for approximately 3 minutes per side, adjusting time based on thickness. Use an instant-read thermometer to confirm the thickest part of each breast reaches 165°F (74°C).

  7. Transfer the grilled chicken to a plate and let it rest for at least 5 minutes before cutting. This allows the juices to redistribute, keeping the meat tender and moist.

  8. Garnish with fresh parsley and thyme, and serve with lemon wedges on the side.
