3 tablespoons olive oil

4 cloves garlic, minced

2 bunches kale, cleaned, stemmed, and torn into bite-sized pieces

1 cup chicken broth

3 tablespoons red wine vinegar

1/4 teaspoon grated nutmeg

Directions

  1. Heat the olive oil in a large skillet over medium heat. Once shimmering, add the minced garlic and sauté for about 1 minute, stirring frequently, until fragrant but not browned.

  2. Add the torn kale pieces to the skillet and stir well to coat with the garlic-infused oil. Cook for 3 to 4 minutes, stirring occasionally, until the kale begins to soften and darken.

  3. Pour in the chicken broth and red wine vinegar. Sprinkle the grated nutmeg over the kale and stir to combine evenly.

  4. Reduce the heat to medium-low and simmer for 8 to 10 minutes, stirring occasionally, until the kale is completely tender and most of the liquid has been absorbed or evaporated.

  5. Taste and adjust seasoning as needed. Transfer to a serving dish and serve warm.
