12 romaine lettuce leaves, preferably from the center of the head

1 cup cherry tomatoes, various varieties, cut into quarters or sixths depending on size

3 tablespoons feta cheese, crumbled

2 strips bacon, cooked until very crispy, then crumbled or broken into small pieces

1 teaspoon high-quality mayonnaise

Directions

  1. Cook the bacon strips in a skillet over medium-high heat until completely crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain, then crumble or break into small bite-sized pieces once cooled.

  2. Rinse the romaine lettuce leaves gently and pat dry with paper towels. Select leaves that are flexible and sturdy enough to hold fillings without tearing.

  3. Cut the cherry tomatoes into quarters or sixths, depending on their size, ensuring the pieces are bite-sized.

  4. Lay out each romaine lettuce leaf on a clean work surface with the concave side facing upward. Place approximately ¼ teaspoon of mayonnaise in the center of each leaf.

  5. Distribute the crumbled bacon, tomato pieces, and crumbled feta cheese evenly among the lettuce leaves, dividing the ingredients into 12 portions.

  6. Gently wrap or fold each leaf around the filling, creating a secure bite-sized package. Arrange on a serving platter and serve immediately.
