Ingredients
4 fillets (about 1 1/2 pounds total) Salmon fillets
to taste Salt
to taste Black pepper
2 large handfuls Fresh mixed herbs (parsley, dill, or chervil)
2 bunches Swiss chard, stemmed and torn into small pieces
¼ cup Pine nuts, toasted
¼ cup Raisins, soaked in warm water
for finishing Olive oil
Directions
Soak the raisins in warm water for 10 minutes, then drain well and set aside.
Toast the pine nuts in a small dry skillet over medium heat, stirring frequently, until fragrant and lightly golden (about 2 minutes). Transfer to a plate and set aside.
Fill a large pot with about 1 inch of water and place a steamer basket inside. Bring the water to a boil over high heat.
Chop the fresh mixed herbs finely. Season the salmon fillets on both sides with salt and pepper, then sprinkle the chopped herbs evenly over the flesh side of each fillet.
Arrange the torn Swiss chard pieces in the steamer basket in an even layer. Place the herb-topped salmon fillets skin-side down on top of the chard.
Cover the pot and steam for 8-10 minutes, until the salmon is opaque throughout and flakes easily when tested with a fork, reaching an internal temperature of 145°F.
Divide the steamed chard among four serving plates and top each with one salmon fillet. Sprinkle the toasted pine nuts and drained raisins over the top, drizzle with a small amount of olive oil, and serve immediately.
