⅓ cup Freshly squeezed lemon juice
4 cloves Garlic cloves, minced
1 tablespoon Dijon mustard
1 tablespoon Dried Italian seasoning
½ teaspoon Kosher salt
¼ teaspoon Freshly ground black pepper
3 tablespoons Extra virgin olive oil
15 ounces Extra-firm tofu, drained and pressed
1½ pounds Boneless, skinless chicken breasts or thighs
1½ pounds Pork chops
1½ pounds Pork tenderloin
Directions
In a medium bowl or measuring cup, whisk together the lemon juice, minced garlic, Dijon mustard, Italian seasoning, kosher salt, and freshly ground black pepper until well combined.
Slowly whisk in the olive oil to emulsify the marinade, creating a cohesive liquid base.
Prepare your protein of choice: For tofu, cut the pressed extra-firm tofu into cubes or slabs. For chicken, slice or keep whole as desired. For pork, prepare chops or cut tenderloin into steaks or chunks.
Place your chosen protein in a shallow dish, resealable bag, or container. Pour the marinade over the protein, ensuring it is fully coated.
Refrigerate for at least 30 minutes for tofu, or 1 to 2 hours for chicken or pork to allow the flavors to penetrate.
Remove the marinated protein from the refrigerator and cook as desired: grill over medium-high heat, pan-sear over medium-high heat, or bake at 400°F until the internal temperature reaches 165°F for chicken, 165°F for pork, or until tofu is golden and heated through.
