½ cup creamy peanut butter or almond butter
½ cup cocoa powder
1 cup unsweetened coconut flakes
1 tablespoon honey
1 cup old fashioned oats
½ cup dairy-free chocolate chips or peanut butter chips
Directions
In a large mixing bowl, combine the peanut butter or almond butter, cocoa powder, coconut flakes, honey, oats, and chocolate chips. Mix thoroughly with a sturdy spoon or spatula until all ingredients are evenly distributed and the mixture comes together.
Using a tablespoon as a measuring tool, scoop individual portions of the mixture and place them onto a parchment paper or silicone mat-lined baking sheet, spacing them slightly apart.
Transfer the baking sheet to the freezer and chill for 15 minutes, allowing the cookies to firm up and set.
