Ingredients

1 can (15.5 oz) low-sodium black beans, drained and rinsed

1 large egg

1/2 cup cooked brown rice

2 scallions, white and green parts minced (about 1/4 cup)

2 tablespoons fresh cilantro, chopped

1 clove garlic, minced

1/4 teaspoon dried oregano

1 teaspoon vegetable oil

1/4 teaspoon salt

1/2 teaspoon black pepper

4 whole-wheat buns

Directions

  1. Drain and rinse the black beans under cold water. Transfer them to a large bowl and mash with a fork until the beans are broken down but still have some texture; avoid creating a completely smooth paste.

  2. Crack the egg into the bowl with the mashed beans and stir well until the egg is fully incorporated throughout the mixture.

  3. Add the cooked brown rice, minced scallions, chopped cilantro, minced garlic, dried oregano, salt, and black pepper to the bowl. Mix all ingredients together until well combined and evenly distributed.

  4. Divide the mixture into 4 equal portions. Using your hands, gently shape each portion into a patty approximately 3/4 to 1 inch thick. The patties should hold together well due to the egg binder.

  5. Place a large skillet over medium-high heat and let it preheat for about 1-2 minutes until it becomes hot.

  6. Add the vegetable oil to the hot skillet and swirl to coat the bottom evenly.

  7. Carefully place the four burger patties into the skillet. Cook without disturbing them for 4-5 minutes until the bottom is golden brown and crispy. Flip the patties and cook the other side for another 4-5 minutes until the second side is similarly browned and the burgers are heated through and firm to the touch.

  8. Transfer the cooked burgers to the toasted whole-wheat buns and serve immediately with your choice of toppings such as lettuce, tomato, avocado, or sauce.
