2 cup buckwheat groats

1 cup chia seeds

2½ whole pitted dates (optional for added sweetness)

1 cup shelled hemp seeds

½ cup pumpkin seeds, coarsely chopped

¼ teaspoon sea salt

1 teaspoon vanilla extract (optional)

4 cup filtered water

Directions

  1. For the muesli base: In a large mixing bowl, combine the buckwheat groats, chia seeds, shelled hemp seeds, and coarsely chopped pumpkin seeds. If using dates for sweetness, finely chop or pulse them briefly and stir them into the mixture along with the sea salt. Divide among mason jars or airtight containers and store at room temperature for up to 3 weeks.

  2. For the hemp milk: In a blender, combine the shelled hemp seeds, filtered water, and vanilla extract if using. Blend on high speed until smooth and creamy, about 1-2 minutes. Strain through cheesecloth or a fine-mesh sieve if you prefer a smoother texture, or leave as-is for a creamier consistency. Store in the refrigerator for up to 3 days.

  3. To prepare a serving: Measure 2 to 4 tablespoons of the muesli mixture into a bowl, depending on your desired thickness and appetite. Pour in approximately ¾ to 1 cup of the hemp milk or any other liquid of your choice.

  4. Allow the muesli to soak at room temperature for at least 20 minutes, stirring occasionally, until the grains and seeds absorb the liquid and soften.

  5. Alternatively, for a warm version: Transfer the soaked muesli to a small saucepan over medium heat, adding an extra splash of hemp milk or water to reach your preferred consistency. Stir gently and cook until warm and tender, about 5-10 minutes, adjusting the liquid as needed.

  6. Top with fresh berries, a pinch of cinnamon, or other toppings of your choice, and serve immediately.
