Ingredients
1 lb beef sirloin or rib-eye steak
1 cup jasmine or short-grain rice
1 lb broccoli florets
4 cloves garlic, minced
2 green onions, sliced
4 teaspoons Asian sesame oil
2 tablespoons lower-sodium soy sauce
2 teaspoons sugar
1/4 teaspoon salt
Salt and pepper to taste
Directions
Prepare the jasmine rice according to package directions, using a 1:2 ratio of rice to water. Bring to a boil, then reduce heat, cover, and simmer until tender and liquid is absorbed, about 15-18 minutes. Set aside and keep warm.
While the rice cooks, trim any excess fat from the beef steak and slice it against the grain into 1/4-inch thick strips. Season with salt and pepper.
In a small bowl, whisk together the minced garlic, lower-sodium soy sauce, sugar, and 1/4 teaspoon salt. Set the sauce aside.
Heat 2 teaspoons of sesame oil in a large skillet over high heat until just smoking. Working in batches to avoid crowding, sear the beef strips for 2-3 minutes per side until they reach an internal temperature of 145°F and are golden brown. Transfer to a plate.
In the same skillet, add the broccoli florets with 1/4 cup water and a pinch of salt. Cover and steam for 4-5 minutes, stirring occasionally, until the broccoli is tender-crisp and the water has mostly evaporated.
Return the cooked beef to the skillet with the broccoli. Pour in the garlic-soy sauce and the remaining 2 teaspoons of sesame oil. Toss everything together over medium-high heat for 1-2 minutes until the beef and vegetables are well coated and the sauce is fragrant.
Divide the cooked jasmine rice among serving bowls. Top with the sizzling beef and broccoli mixture, then garnish generously with sliced green onions. Serve immediately while still hot and aromatic.
