Ingredients
4 boiled eggs
2 tablespoons butter
2 cloves garlic, minced
Salt to taste
Chilli powder to taste
1 teaspoon dried oregano
1 teaspoon chilli flakes
1 teaspoon dried parsley
1 teaspoon ground cumin
1 teaspoon Cajun seasoning
1/4 cup chicken or vegetable stock
2 tablespoons fresh lemon juice
Directions
Melt the butter in a large skillet over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the oregano, chilli flakes, dried parsley, cumin powder, and Cajun seasoning. Mix well and cook for 30 seconds to toast the spices.
Pour in the stock and lemon juice, then gently simmer for 3 minutes, stirring occasionally.
Carefully poke several holes in each boiled egg with a fork or knife tip, then add them to the sauce. Gently toss to coat the eggs evenly, and simmer for 1 minute to warm them through. Season with salt and additional chilli powder to taste.
Transfer the eggs to a serving bowl or plate, drizzle generously with the remaining sauce, and serve hot.
