Ingredients
2 (12-ounce) packages low-fat baked breaded chicken breast tenderloins or cutlets
1 teaspoon dried oregano
1 1/2 cups jarred marinara sauce
4 tablespoons freshly grated Parmesan cheese
Freshly ground black pepper to taste
Directions
Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly coat with cooking spray.
Arrange the breaded chicken tenderloins on the prepared baking sheet in a single layer. Bake according to package directions until heated through and the internal temperature reaches 165°F, typically 12–15 minutes.
While the chicken bakes, combine the marinara sauce and dried oregano in a small saucepan over medium-low heat. Warm gently, stirring occasionally, until the sauce is hot and the oregano is fully incorporated, about 5 minutes.
Remove the chicken from the oven. Spoon the warm marinara mixture evenly over each piece of chicken.
Sprinkle the grated Parmesan cheese and a pinch of freshly ground black pepper over the top of each piece.
Return the baking sheet to the oven for 2–3 minutes, just until the cheese warms slightly and the dish is heated through.
Remove from the oven and serve immediately while hot.
