2 cups masa harina
¼ teaspoon salt
1 cup warm water
24 beef cocktail franks
Directions
In a large mixing bowl, combine the masa harina and salt. Gradually pour in the warm water while mixing with a wooden spoon or your hands until a dough begins to form. Transfer the dough to a lightly floured work surface and knead for 5 minutes, working until the mixture becomes smooth and no longer sticky. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 1 hour.
After the resting period, divide the dough into 24 equal portions and roll each one into a smooth ball. Working with one ball at a time, place it on a floured surface and use a rolling pin to flatten it into a thin round, approximately 1/2 inch thick. Lay a beef cocktail frank along one edge of the dough round, then carefully roll the dough up around the frank, tucking and sealing the ends underneath. Repeat with all remaining dough balls and franks, arranging them seam-side down on a parchment-lined baking sheet.
Preheat your oven to 350 degrees F. Place the assembled franks in the masa enrobing in the oven and bake for 15 to 20 minutes, until the exterior turns light golden brown.
Remove from the oven and serve warm, optionally accompanied by spicy mustard or your preferred condiment for dipping.
