Farmers Cheese Cake with Raisins (Zapekanka)
Recipe GLPR2139e233930308
A traditional Eastern European baked farmers cheese cake studded with plump raisins. This creamy dessert combines farmer's cheese, sour cream, and eggs to create a rich, custard-like texture with a golden, slightly firm top. Warm slices make a comforting treat on their own or with a dollop of sour cream.

Ingredients
4 eggs
20 oz farmer's cheese
1 cup sour cream
1/2 cup cream of wheat
1/2 cup sugar
1 tbsp baking powder
1 cup raisins
Directions
Preheat your oven to 375°F. Line an 8x12 inch or 9-inch round baking pan with parchment paper or lightly coat it with cooking spray.
Add the farmer's cheese, eggs, sugar, sour cream, cream of wheat, and baking powder to a blender or stand mixer.
Blend or mix on medium speed until the mixture becomes completely smooth and lump-free, about 2-3 minutes.
Gently fold the raisins into the batter by hand using a spatula, distributing them evenly throughout the mixture.
Pour the batter into the prepared pan and spread it evenly with a spatula.
Bake at 375°F for 35 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
Remove from the oven and allow the cake to cool to room temperature, about 30 minutes.
Once cooled, cut the cake into individual squares or slices. Serve at room temperature, chilled, or warm the slices in a microwave or oven before serving.
