Ingredients
750 g Bone-in chicken thighs and drumsticks
2 tbsp Sambal oelek
2 tbsp Honey
1 tbsp Light soy sauce
7 clove Garlic cloves, finely chopped
Salt
Directions
Preheat your oven to 425°F (220°C). Pat the chicken pieces dry with paper towels and arrange them in a single layer on a rimmed baking sheet.
In a small bowl, whisk together the sambal oelek, honey, light soy sauce, and finely chopped garlic until well combined.
Brush the sambal-honey mixture generously over all surfaces of the chicken pieces, coating them evenly. Season lightly with salt to taste.
Roast in the preheated oven for 35–40 minutes, until the internal temperature at the thickest part of the thigh reaches 165°F (74°C), basting with any accumulated pan drippings halfway through cooking.
Remove from the oven and let rest for 5 minutes before serving. Spoon any remaining pan sauce over the chicken.
Comments
Sambal oelek is the gatekeeper here: Harris Teeter and Food Lion stock it in the Asian aisle most reliably, but ALDI and Kroger carry it inconsistently, and Publix and Walmart do not reliably have it in-store. That means a dedicated trip or a pivot to another hot-pepper base is real friction on a weeknight. The rest of the dish is cheap and straightforward—soy sauce, honey, garlic, and a whole chicken are pantry anchors or loss leaders—and roasting takes the full 45 minutes with minimal active work, so the time claim is honest. It reheats beautifully and feeds four without fuss, making it a solid family dinner once you solve the sambal problem.
