Ingredients

3/4 cup dry roasted unsalted cashews, coarsely chopped

1 cup low-fat cottage cheese

1 1/2 cups red grapes, quartered

1 celery stalk, chopped

Ground black pepper to taste

2 tablespoons fresh parsley, chopped

8 lettuce leaves

8 slices whole-grain bread

Directions

  1. In a medium bowl, combine the cottage cheese, quartered grapes, chopped celery, chopped cashews, fresh parsley, and black pepper to taste. Stir gently until all ingredients are evenly distributed and the salad mixture is well combined.

  2. Toast all 8 bread slices until golden brown and crispy, approximately 2–3 minutes, depending on your toaster setting.

  3. Spread approximately 1/4 of the grape and cashew salad mixture evenly onto each of the 4 bottom bread slices.

  4. Layer 2 lettuce leaves on top of the salad mixture on each sandwich, then place a toasted bread slice on top to complete each sandwich. Serve immediately.
