1 lb. rigatoni pasta

Extra-virgin olive oil

2 garlic cloves, minced

1 cup diced onions

1 tablespoon Cajun spice blend

1 tablespoon paprika

Kosher salt

Freshly ground black pepper

1/2 cup dry white wine, such as Sauvignon Blanc

1 cup low-sodium chicken stock

1/2 cup heavy cream

1 cup frozen peas

2 cups shredded rotisserie chicken, skin removed

1 tablespoon unsalted butter

1/2 cup fresh parsley, chopped

1 cup shredded cheddar cheese, plus more for serving

Directions

  1. Fill an 8-quart stock pot with water, generously salt it, and bring to a rolling boil. Add the rigatoni and cook according to package directions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and return it to the pot.

  2. While the pasta cooks, heat a large skillet over medium heat and add a generous glug of olive oil. Add the minced garlic and diced onions, stirring constantly with a wooden spoon until softened, about 2 minutes. Season the mixture with Cajun spice blend, paprika, kosher salt, and freshly ground black pepper to taste.

  3. Pour the white wine into the skillet, stirring to combine with the aromatics. Add the chicken stock and bring the mixture to a gentle boil. Reduce the heat and simmer for 4 minutes to allow the flavors to develop.

  4. Remove the skillet from heat and stir in the heavy cream, frozen peas, and shredded rotisserie chicken. Return to medium heat and simmer gently until the chicken is heated through, about 2 minutes, stirring occasionally.

  5. Turn off the heat under the pasta pot. Add the sauce to the cooked pasta and stir gently to combine. Stir in the unsalted butter, chopped fresh parsley, and shredded cheddar cheese until fully incorporated. If the sauce seems too thick, gradually add the reserved pasta water one splash at a time until you reach your desired consistency.

  6. Serve the Cajun chicken rigatoni directly from the skillet or transfer to a serving platter. Top each portion with additional shredded cheddar cheese and enjoy while warm.
