Ingredients
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup packed brown sugar
3 large eggs
1 1/2 cups peanut butter, smooth or chunky
1 Tablespoon vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
4 1/2 cups old-fashioned rolled oats
1 cup chocolate chips
1 cup M&M candies
Directions
Preheat your oven to 350°F. Line a 13x9-inch metal baking pan with parchment paper, leaving a 2-inch overhang on each of the short sides for easy removal later.
In a stand mixer fitted with the paddle attachment, cream together the softened butter, granulated sugar, and brown sugar. Beat for about 2 minutes until the mixture is light and fluffy.
Add the eggs one at a time to the butter mixture, beating briefly after each addition until incorporated.
Add the peanut butter, vanilla extract, baking soda, and salt to the mixer. Beat until everything is well combined and the mixture is smooth.
Add the rolled oats to the bowl and mix on low speed just until combined. Do not overmix.
Using a spatula or wooden spoon, fold in the chocolate chips and M&M candies until evenly distributed throughout the dough.
Transfer the cookie dough to the prepared baking pan. Press it firmly into an even, compact layer, filling all corners.
Bake for about 30 minutes until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Do not overbake if you prefer softer, chewier bars.
Remove the pan from the oven and let the cookie cool in the pan for 20 minutes. For chewier bars, allow 30 to 45 minutes of cooling time.
Using the parchment paper overhang, carefully lift the cooled cookie sheet onto a cutting board. Slice the cookie into 24 equal bars and serve.
