Ingredients

1 1/2 lbs ground meat (beef, turkey, or buffalo)

6 medium turnips

8 large eggs

6 scallions, chopped

Sea salt to taste

Black pepper to taste

Directions

  1. Preheat your oven to 400°F.

  2. Heat a large skillet over medium-high heat. Add the ground meat and begin browning, breaking it into small, bite-sized pieces as it cooks. Continue stirring occasionally until the meat is fully cooked through, about 8-10 minutes.

  3. While the meat cooks, peel the turnips and grate them into thin, fry-like strands using a box grater or julienne peeler.

  4. In a large mixing bowl, crack all the eggs and beat them together with a pinch of sea salt and black pepper until well combined.

  5. Add the grated turnips and cooked ground meat to the beaten eggs. Stir in the chopped scallions and mix until evenly distributed.

  6. Pour the entire mixture into a 9x13 inch baking dish and spread evenly.

  7. Bake uncovered at 400°F for 45 minutes.

  8. Remove the baking dish from the oven and cover it tightly with aluminum foil.

  9. Return to the oven and bake covered for an additional 25 minutes, until the eggs are fully set.

  10. Remove from the oven and let cool for 15 minutes before serving.
