Ingredients

10 oz baby spinach

½ cup dried cranberries

½ cup crumbled goat cheese

¼ cup diced red onion

4 tbsp fresh orange juice

1 ½ tsp orange zest

½ cup balsamic vinaigrette dressing

Directions

  1. In a large bowl, combine the orange juice, orange zest, and balsamic vinaigrette dressing. Whisk together until well blended. Refrigerate the vinaigrette while preparing the salad.

  2. In a salad bowl, layer the baby spinach, dried cranberries, crumbled goat cheese, and diced red onion in the order listed.

  3. Cover and refrigerate the salad until ready to serve.

  4. Just before serving, drizzle the prepared vinaigrette over the salad and toss well to combine. Serve immediately on individual plates.
