Akara is a popular West African fritter made from mashed beans, eggs, and spices that are pan-fried until golden and crispy on the outside. These savory patties are best served hot as a main course, alongside sauce or pap for a satisfying meal.

Ingredients

2 cups peeled black-eyed peas or brown beans

2 large eggs

1 medium onion, finely chopped

3 fresh hot peppers, crushed

1 teaspoon salt

2 tablespoons vegetable oil

Directions

  1. Add the peeled beans to a blender with a small amount of water and blend until you achieve a smooth, thick paste consistency, scraping down the sides as needed.

  2. Transfer the bean paste into a large mixing bowl.

  3. Crack the eggs into the bowl and add the chopped onion, crushed peppers, and salt to the bean mixture.

  4. Stir all the ingredients together thoroughly until well combined and the mixture is uniform.

  5. Place a large frying pan over medium heat and add approximately 1 tablespoon of the vegetable oil.

  6. Once the oil is hot, carefully scoop portions of the batter into the pan using a spoon or ice cream scoop, flattening each portion slightly to form a patty.

  7. Fry each akara for 3-4 minutes until bubbles appear on the surface and the bottom develops a light golden color.

  8. Flip each patty carefully and cook the other side for another 2-3 minutes until golden brown and cooked through.

  9. Transfer the cooked akara to a paper towel-lined plate to drain excess oil, then repeat with remaining batter, adding more oil to the pan as needed.

  10. Serve the hot akara warm with your choice of sauce or pap.
