Ingredients
2 medium peaches
2/3 cup low-fat vanilla yogurt
2 cups orange juice
6 paper cups
6 wooden spoons or popsicle sticks
aluminum foil
Directions
Wash your hands thoroughly with soap and water before beginning.
Rinse the peaches under cool water. Using a sharp knife, cut away the skin and remove the pit from each peach. Chop the peach flesh into small, bite-sized pieces.
Distribute the chopped peach pieces evenly among the 6 paper cups, filling about a third of the way up.
Pour the vanilla yogurt into a medium mixing bowl.
Slowly pour the orange juice into the bowl with the yogurt while stirring continuously to combine smoothly.
Continue stirring until the mixture is well blended and uniform in texture.
Carefully pour the yogurt and orange juice mixture into each cup over the peaches until the cup is nearly full.
Place a wooden spoon or popsicle stick in the center of each cup so it stands upright.
Cut 6 squares of aluminum foil, each large enough to cover the opening of a cup.
For each cup, carefully push the handle of the wooden spoon through the center of the foil square.
Position the foil-wrapped spoon so the foil covers the cup opening and holds the spoon steady in the center.
Place all 6 cups in the freezer for at least 4 hours, or until completely frozen.
Just before serving, gently peel away the paper cup from around each frozen pop and enjoy immediately.
