Ingredients

1 soft hoagie roll or small Italian loaf (8–9 inches), split in half lengthwise

1 tablespoon unsalted butter

1 small onion, finely chopped

8 ounces white or crimini mushrooms, trimmed and finely chopped

Kosher salt to taste

Freshly ground black pepper to taste

1/4 cup ketchup

1 cup grated part-skim mozzarella cheese

2 slices deli ham, torn in half

Mayonnaise for topping

Thinly sliced fresh chives for topping (optional)

Crispy fried onions for topping (optional)

Drained canned corn kernels for topping (optional)

Chopped pickles for topping (optional)

Directions

  1. Preheat your oven to 375°F. Line a rimmed baking sheet with foil. Place the two bread halves cut side up on the prepared baking sheet.

  2. Melt the butter in a medium skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 3–4 minutes.

  3. Add the finely chopped mushrooms to the skillet with the onions. Season lightly with kosher salt and freshly ground black pepper. Continue cooking, stirring occasionally, until all excess moisture has evaporated and the mushroom mixture has reduced to a thick, spreadable consistency, approximately 10 minutes more. Remove from heat and let cool slightly.

  4. Spread 2 tablespoons of ketchup evenly over each bread half.

  5. Divide the cooled mushroom mixture evenly between the two bread halves, spreading it over the ketchup. Sprinkle half of the grated mozzarella cheese over each piece, reserving some cheese for the final layer.

  6. Arrange the torn deli ham pieces on top of the cheese. Sprinkle the remaining mozzarella evenly over the ham.

  7. Place the baking sheet in the preheated 375°F oven and bake for 12–14 minutes, until the bread is golden and crispy, and the cheese is melted and lightly browned with visible bubbles.

  8. Remove from the oven and let cool for 1–2 minutes. Top each zapiekanka with a small dollop of mayonnaise and your choice of optional toppings such as fresh sliced chives, crispy fried onions, drained corn kernels, and/or chopped pickles. Serve immediately.
