Ingredients
1 pineapple peel, crown, and scraps
2 cinnamon sticks
1 knob of fresh ginger, roughly chopped
8 cups of water
Directions
Rinse the pineapple peel, crown, and scraps under cool running water to remove any dirt or debris.
In a large pot, combine the pineapple pieces, cinnamon sticks, and chopped ginger with the water.
Bring the mixture to a boil over high heat, then reduce to a simmer and cook uncovered for 15-20 minutes until the liquid develops a golden color and aromatic flavor.
Remove the pot from heat and allow the tea to cool to room temperature, about 15 minutes.
Strain the tea through a fine-mesh sieve into a pitcher, discarding the pineapple pieces, cinnamon sticks, and ginger.
Refrigerate the strained tea until thoroughly chilled, at least 2 hours.
Pour into ice-filled glasses and serve cold.
