1 bunch Fresh thyme sprigs

2 teaspoons Picked thyme leaves

½ Lemon, thinly sliced

1 tablespoon Fresh lemon juice

1 teaspoon Lemon zest

3½ Boneless skinless salmon filets

1 tablespoon Olive oil

Kosher salt

Freshly ground black pepper

2 tablespoons Finely chopped preserved lemon (optional)

½ cup Crème fraîche

Directions

  1. In a small bowl, whisk together the crème fraîche, picked thyme leaves, lemon juice, lemon zest, and the chopped preserved lemon (if using). Season to taste with a pinch of kosher salt and black pepper. Set the lemon crème fraîche aside.

  2. Pat the salmon filets dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.

  3. Heat the olive oil in a large skillet over medium-high heat until shimmering.

  4. Carefully place the salmon filets skin-side up in the hot skillet. Cook for 5 to 7 minutes without moving them, until the bottom is golden and cooked through to an internal temperature of 145°F.
