Chicken Wings with Cumin, Lemon & Garlic

Ingredients
12 chicken wings
2 garlic cloves, crushed
1 Zest and juice of 1 lemon
1 teaspoon cumin seeds
2 tablespoons olive oil
1 tablespoon honey
Salt and black pepper to taste
Directions
Using sharp kitchen scissors, separate each chicken wing at the joint into two pieces, discarding the tips if desired. Pat the wing pieces dry with paper towels.
In a bowl, combine the crushed garlic, lemon zest, lemon juice, cumin seeds, and olive oil. Season generously with salt and black pepper and stir to combine.
Add the chicken wing pieces to the marinade and toss until evenly coated. Transfer to a covered dish and refrigerate for at least 1 hour, or preferably overnight.
Preheat your oven to 200°C (180°C fan / gas mark 6) or prepare an outdoor barbecue for grilling.
If baking: Arrange the marinated wings on a lined baking tray in a single layer. Bake for 40 minutes until the skin begins to crisp and brown.
Brush the wings with honey and return to the oven for the final 10 minutes, until the internal temperature reaches 165°F and the skin is golden and crispy. If grilling: Place wings on the grill grates and cook for approximately 10 minutes per side, then drizzle with honey and grill for a final 10 minutes until the internal temperature reaches 165°F.
Transfer the roasted or grilled wings to a serving platter and let rest for a few minutes before serving with paper napkins.
