Ingredients
1/2 cup butter
4 cups confectioners' sugar
2 cups creamy peanut butter
3 cups crispy rice cereal
2 cups semisweet chocolate chips
4 tablespoons shortening
Directions
In a large mixing bowl, combine the softened butter, creamy peanut butter, and confectioners' sugar. Mix until well blended and smooth. Fold in the crispy rice cereal until evenly distributed throughout the mixture.
Spoon the mixture into small portions and roll each one into a ball about the size of a walnut. Arrange all the balls on a parchment-lined baking sheet and refrigerate for 15 minutes to firm up.
Place the semisweet chocolate chips and shortening in a small saucepan. Heat over low heat, stirring frequently, until completely melted and smooth.
Working one at a time, use a fork or dipping tool to coat each peanut butter ball in the melted chocolate. Return the coated ball to the parchment-lined sheet.
Allow the chocolate coating to set at room temperature or refrigerate until firm. Store in an airtight container.
