Ingredients

1 ciabatta roll

½ small garlic clove

¾ tbsp basil pesto

1 ripe tomato, sliced

5 fresh basil leaves

1 cooked chicken breast, skin removed, sliced

50g reduced-fat mozzarella, sliced

30g rocket (arugula)

1 tsp balsamic glaze

Directions

  1. Carefully slice the ciabatta roll in half horizontally. Place the halves cut-side up on a toaster or under a hot broiler and toast until the insides are golden and slightly crispy, about 2–3 minutes. Remove from heat and immediately rub the cut side of the garlic clove over each toasted cut surface to lightly infuse it with garlic flavor.

  2. Spread the basil pesto evenly over the toasted cut side of the bottom half of the roll.

  3. Layer the sliced tomato over the pesto, then arrange the fresh basil leaves on top.

  4. Add the sliced cooked chicken breast in a single layer over the basil.

  5. Place the sliced mozzarella over the chicken, then top with the rocket leaves.

  6. Drizzle the balsamic glaze evenly over the assembled layers.

  7. Top with the upper half of the toasted ciabatta roll and serve immediately while warm.
