Ingredients
12 ounces (about 2 1/2 cups) fresh blackberries
1 cup dark brown sugar, firmly packed
2 cups full-fat plain yogurt
1/8 teaspoon ground clove
Kosher salt, to taste
1 lemon Freshly squeezed lemon juice from 1 lemon, to taste
1/2 teaspoon freshly grated lemon zest
Directions
Place blackberries, yogurt, brown sugar, and ground clove in a blender. Blend on high speed until the mixture is completely smooth and uniform, about 30 seconds.
Pour the blended mixture through a fine-mesh strainer set over a mixing bowl. Using a ladle or spoon, gently press on the mixture to extract all the liquid and force the fruit through, leaving the seeds behind in the strainer. Stir in the lemon zest.
Taste the mixture. Add lemon juice and kosher salt in small increments (about 1/4 teaspoon at a time), stirring well and tasting after each addition, until the flavor achieves a pleasant balance between sweetness and tartness. Chill the mixture in an ice bath or cover and refrigerate until it reaches at least 40°F on an instant-read thermometer.
Transfer the chilled mixture to your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Transfer the churned frozen yogurt to an airtight container and place in the freezer for at least 4 to 5 hours, or until firm, before serving.
