Ingredients
6 large potatoes, peeled and diced small
1 lb ground beef
1/2 medium onion, very finely diced
1 cup very finely diced carrots
1 stalk celery, very finely diced
1/2 tsp minced garlic
1 1/2 tbsp chili powder
1/2 tsp salt
A pinch of black pepper
1 tsp chicken bouillon
4 tbsp butter
1/2 to 3/4 cup milk
1 cup frozen corn
1 cup frozen peas
1 can (546 ml) kidney beans, rinsed and drained
2 cups barbecue sauce
2 to 3 tbsp brown sugar, optional, to taste
1/2 to 1 cup shredded cheddar cheese
Directions
Place peeled and diced potatoes in a large pot and cover with cold salted water. Bring to a boil and cook until potatoes are tender, about 12-15 minutes. Meanwhile, in a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Once browned, drain any excess fat.
Add the diced onion, carrots, celery, garlic, chili powder, salt, and pepper to the browned beef. Stir well to combine and cook over medium heat for 10-15 minutes, stirring occasionally, until the vegetables are softened and cooked through.
Drain the cooked potatoes thoroughly and transfer to a large bowl. Add the butter, milk, and chicken bouillon. Mash together until smooth and creamy. Set aside.
Preheat oven to 350°F. To the cooked beef and vegetable mixture, add the frozen corn, frozen peas, rinsed kidney beans, barbecue sauce, and brown sugar if desired. Stir well and simmer over medium heat for 5 minutes until all vegetables are heated through.
Transfer the beef and vegetable mixture to a 9x13-inch baking dish or 3-quart casserole. Spread the mashed potatoes evenly over the top, covering the filling completely.
Bake at 350°F for 20 minutes or until the casserole is heated through. Remove from oven, top with shredded cheddar cheese, and broil on high for 2-3 minutes, watching closely, until the cheese is melted and lightly browned. Let rest 5 minutes before serving.
