Ingredients
1 large baking potato, boiled and peeled
2 tablespoons fresh cilantro, finely chopped
1/4 teaspoon garam masala
1 1/2 teaspoons ginger, grated
1/2 teaspoon ground cumin
1 tablespoon olive oil
1/2 cup panko breadcrumbs
1/4 cup peas
1/4 teaspoon red chili powder
salt, to taste
1/4 teaspoon turmeric
Directions
In a large mixing bowl, mash the boiled potato until the texture is mostly smooth, leaving a few small lumps for a rustic consistency.
Add the peas, cilantro, red chili powder, grated ginger, garam masala, and turmeric to the mashed potatoes. Mix well with your hands until the ingredients are evenly distributed throughout. Season with salt to your preference.
Take small portions of the mixture and shape them into patties approximately 2 inches wide and half an inch thick using your hands.
Place the panko breadcrumbs in a shallow bowl. Roll each patty in the breadcrumbs, coating both the top and bottom sides evenly. Arrange the coated patties on a clean surface.
Heat a large skillet or non-stick pan over high heat until hot.
Add the olive oil to the hot pan and swirl it to coat the cooking surface evenly. Carefully place each patty into the oil and reduce the heat to medium.
Allow the patties to cook for 4 to 5 minutes until the bottom is golden brown. Gently flip each patty and cook the other side for an additional 3 to 4 minutes until it is also golden brown. If the pan appears too dry, add a small drizzle of oil as needed.
Transfer the cooked patties to a serving plate and serve warm. Enjoy them as a side dish or appetizer.
