Ingredients
4 boneless, skinless chicken breasts
3 shallots, finely chopped
8 ounces canned crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage
1 teaspoon dried marjoram
1 teaspoon white pepper
1.5 tablespoons dried oregano
2 bay leaves
½ whole juice of 1/2 lemon
1/2 cup dry white wine
1 tablespoon chopped Kalamata olives
1 cup crumbled feta cheese
1/2 cup grated Parmesan cheese
Directions
Season both sides of the chicken breasts generously with white pepper. Set aside.
Heat a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 5-6 minutes per side until they develop a golden-brown crust. The internal temperature should reach 165°F at the thickest part. Transfer the cooked chicken to a plate and set aside.
In the same skillet, reduce heat to medium and add the finely chopped shallots. Sauté for 2-3 minutes until softened and fragrant.
Pour in the dry white wine and scrape the bottom of the skillet with a wooden spoon to release any flavorful browned bits. Allow the wine to reduce by half, about 2 minutes.
Add the canned crushed tomatoes, dried basil, rosemary, thyme, sage, marjoram, oregano, and bay leaves to the skillet. Stir well to combine all ingredients.
Return the seared chicken breasts to the skillet, nestling them into the tomato sauce. Reduce heat to medium-low and simmer for 10-12 minutes, allowing the flavors to meld and the chicken to finish cooking through.
Stir in the lemon juice and Kalamata olives. Taste and adjust seasonings as needed.
Sprinkle the crumbled feta cheese and grated Parmesan cheese evenly over each chicken breast. Cover the skillet and let it cook for 2-3 minutes until the cheeses begin to warm and slightly soften.
Remove the bay leaves and serve immediately while the cheeses are still creamy and warm.
