Grilled Sausages with Tomatoes

Ingredients
3 sprigs Fresh thyme sprigs
2 cloves Garlic cloves, minced
2 pints Cherry or grape tomatoes
2 medium Medium tomatoes, quartered
2 tablespoons Olive oil
¼ pinch Red pepper flakes, optional
¼ cup Red wine
Salt, to taste
Freshly ground black pepper, to taste

Directions
Set up your grill for indirect heat. For a charcoal grill, arrange coals to one side only. For a gas grill, light only half of the burners to high heat.
In a large disposable foil baking pan, combine the cherry tomatoes, quartered tomatoes, fresh thyme sprigs, minced garlic, olive oil, red wine, salt, and black pepper. Mix gently to combine.
Add a pinch of red pepper flakes to the tomato mixture if you prefer extra heat. Arrange the sausages on top of the tomato mixture, nestling them in so they are partially submerged.
Place the foil pan on the hot side of the grill and allow the liquid to come to a simmer, about 2–3 minutes. Once simmering, carefully move the pan to the cooler side of the grill.
Cover the grill with the vents positioned over the pan. Cook for approximately 20 minutes, turning the sausages halfway through. The sausages are done when an instant-read thermometer inserted into the thickest part registers 160°F.
Using tongs, transfer the cooked sausages from the tomato mixture to the hot side of the grill. Sear them for about 3 minutes, turning occasionally, until the exterior is browned and crispy.
Return the seared sausages to the pan with the tomato sauce. Serve immediately while hot.
