Fluffy yeasted waffles infused with vanilla bean paste, served with a warm roasted peach maple syrup and cinnamon honey butter. The batter rises for an hour, developing a tender, airy crumb that's more indulgent than traditional waffles. Roasted peaches caramelize in the oven before being folded into pure maple syrup, creating a sophisticated topping that balances sweet fruit with warm spices.

Ingredients
1½ teaspoon Active dry yeast
1½ cup Warm whole milk
1 tablespoon Coconut oil, melted
3 tablespoon Honey
2 cup All-purpose flour
¼ teaspoon Salt
2 large Large eggs, lightly beaten
2 teaspoon Vanilla bean paste
6 tablespoon Unsalted butter, softened
½ teaspoon Ground cinnamon
3 medium Fresh peaches, chopped
1½ cup Pure maple syrup
Directions
Combine warm milk, melted coconut oil, and honey in a large mixing bowl and stir to combine.
Sprinkle active dry yeast over the milk mixture and let stand for about 15 minutes until the mixture becomes foamy and fragrant.
Add all-purpose flour and salt to the yeast mixture and stir until just combined; the batter does not need to be perfectly smooth.
Gently whisk in the lightly beaten eggs and vanilla bean paste until evenly incorporated throughout the batter.
Cover the mixing bowl with plastic wrap and allow the batter to rise at room temperature for 1 hour, or refrigerate overnight and cook the following morning.
While the batter rises, preheat your oven to 375°F. Toss the chopped peaches with the remaining coconut oil, cinnamon, and a pinch of salt on a baking sheet.
Roast the peaches for 30 to 35 minutes, stirring or flipping halfway through, until they are soft and deeply caramelized at the edges.
Pour the maple syrup into a small saucepan and place over low heat. Add the roasted peaches along with any juices from the baking sheet and warm gently until ready to serve.
In a small bowl, combine the softened unsalted butter, honey, and ground cinnamon, stirring until smooth and well blended. Set aside until serving.
Heat your waffle iron to the desired setting. Once the batter has risen, add approximately 1/2 cup of batter to each waffle iron cavity and cook for about 5 minutes per waffle, until the exterior is golden and crispy.
Transfer the cooked waffles to a serving plate and top with a generous dollop of cinnamon honey butter and warm roasted peach maple syrup.
Comments
This recipe demands five hours start-to-finish, with most of that waiting for dough to rise; the actual hands-on time is maybe 45 minutes, but you're tethered to the kitchen. Vanilla bean paste and coconut oil are specialty items requiring stops beyond your regular Harris Teeter or Food Lion run, adding friction to a weekend project that only feeds four. The peach syrup is genuinely good and the yeasted waffle texture justifies the complexity, but only if you're cooking for company or treating yourself to a leisurely morning with advance planning. Cost per serving lands around $3.50-4.00 once you factor in the vanilla bean paste and fresh peaches, making this a splurge breakfast rather than a weeknight staple.
