7 ounces skinny dried egg noodles (approximately half a standard package)
3 tablespoons unsalted butter
3 garlic cloves, finely minced
1/4 cup fresh scallions, chopped
2 tablespoons brown sugar
1 tablespoon oyster sauce
1 teaspoon fish sauce
Directions
Immerse the dried egg noodles in a bowl of cold water and let them soak for 2 minutes to begin softening.
Drain the noodles completely, then place them in a pot of boiling water and cook for 3 minutes until just tender.
Drain the cooked noodles thoroughly and use chopsticks or two forks to gently separate the strands so they don't clump together. Set aside.
Heat the butter in a large wok or sauté pan over medium-low heat. Once the butter is melted and warm but not sizzling, add the minced garlic and chopped scallions.
Fry the garlic and scallions gently for about 1 to 2 minutes until they become fragrant, stirring occasionally. Be careful not to burn them by keeping the heat low and watching closely.
Add the brown sugar, fish sauce, and oyster sauce to the aromatics. Stir everything together until the mixture is well combined and fragrant.
Add the drained noodles to the pan and toss continuously for about 2 minutes, ensuring the sauce coats all the strands evenly. The noodles should be heated through and glistening.
Taste and adjust seasoning if desired. Transfer to a serving dish and serve warm.
