Ingredients

1.2 kg Beef roasting joint

1½ tbsp Neutral-flavored oil

1 tsp Dried thyme

1 tsp Onion granules

1 tsp Mustard powder

1 tsp Salt

1 tsp Ground black pepper

Directions

  1. Remove the beef roast from the refrigerator and allow it to rest on the counter for 20–30 minutes until it reaches room temperature. This ensures even cooking throughout the joint.

  2. Preheat your air fryer to 220°C (430°F). Pat the beef dry with paper towels to ensure a good sear.

  3. Rub the entire surface of the beef joint with the neutral-flavored oil until well coated.

  4. In a small bowl, combine the dried thyme, onion granules, mustard powder, salt, and ground black pepper. Mix thoroughly until evenly blended.

  5. Generously rub the spice mixture all over the oiled beef joint, pressing gently so it adheres to the surface.

  6. Place the seasoned beef in the air fryer basket and cook at 220°C for 10 minutes to sear the exterior and develop a flavorful crust.

  7. After 10 minutes, reduce the air fryer temperature to 170°C (340°F). Continue cooking for 30–40 minutes depending on your preferred doneness: 30 minutes for medium-rare (internal temperature 130–135°C), or 40 minutes for medium-well (internal temperature 140–145°C). Use a meat thermometer inserted into the thickest part without touching bone to verify doneness.

  8. Once cooked to your preference, carefully transfer the beef roast to a clean cutting board. Tent loosely with aluminum foil and allow it to rest for up to 30 minutes. This allows the juices to redistribute, ensuring maximum tenderness and flavor.

  9. Carve the beef against the grain into slices and serve warm with your choice of accompaniments.
