Ingredients

2 garden herb tortillas (burrito size)

2 tablespoons mayonnaise

2 tablespoons pesto sauce

4-6 sliced roasted red peppers

8-10 kalamata olives, halved

1-2 tablespoons crumbled feta cheese

4-6 romaine lettuce leaves

5-6 thin slices of deli chicken

Directions

  1. Lay out one herb tortilla on a clean, flat surface. Spread 1 tablespoon of mayonnaise evenly over the lower half of the tortilla, then spread 1 tablespoon of pesto sauce on top.

  2. Layer 2-3 romaine lettuce leaves horizontally across the center of the tortilla, then arrange 2-3 thin slices of deli chicken on top of the lettuce.

  3. Add 2-3 roasted red pepper slices and about 4-5 halved kalamata olives along the filling. Sprinkle with about ¾ tablespoon of crumbled feta cheese.

  4. Starting from the filled side, tightly roll the tortilla toward you, folding in the sides as you go to enclose the filling. Repeat steps 1-3 with the second tortilla.

  5. Cut each wrap in half diagonally if desired, and serve immediately.
