Ingredients

2 tablespoon Extra virgin olive oil

2 Romaine lettuce heads

Salt

Black pepper

1 Onion, sliced into thin noodles

¼ teaspoon Garlic powder

½ cup Crumbled blue cheese

¼ cup Nonfat plain Greek yogurt

3 tablespoon Balsamic vinegar

2 teaspoon Dijon mustard

1 tablespoon Honey

Directions

  1. Preheat a grill or grill pan to medium-high heat.

  2. Rinse the romaine lettuce heads and trim the ends. Cut each head in half lengthwise.

  3. Brush the cut sides of the romaine halves with 1 tablespoon of the olive oil. Season the cut sides generously with black pepper and lightly with salt.

  4. Place the lettuce halves cut-side down on the hot grill pan. Cook for about 5 minutes, applying medium pressure with a spatula occasionally to ensure even cooking and charring. Repeat the grilling process with all lettuce halves until they are all cooked through with light char marks. Transfer to a serving platter.

  5. While the last batch of lettuce is grilling, warm the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.

  6. Slice the onion into very thin, noodle-like strands. Once the oil is hot, add the onion noodles to the skillet. Season with salt, pepper, and garlic powder.

  7. Cook the onions for 5 to 7 minutes, stirring occasionally, until they are caramelized, softened, and lightly browned. Transfer to a small bowl.

  8. In a small bowl, whisk together the Greek yogurt, balsamic vinegar, Dijon mustard, and honey until smooth and well combined. Season with salt and pepper to taste.

  9. Top each grilled romaine half with a portion of the caramelized onion noodles and crumbled blue cheese. Drizzle generously with the Greek yogurt balsamic dressing and serve immediately.
