Ingredients
3 large ripe peaches, peeled and cut into small chunks
6–7 Italian plums, halved and chopped
1/2 cup sugar
1/4 cup Clear Jel or other pie thickener
1/2 teaspoon cinnamon
2 tablespoons bourbon
1/3 cup brown sugar
1/2 cup rolled oats
1/4 cup all-purpose flour
4 tablespoons butter, melted
Directions
Preheat your oven to 350°F. In a large bowl, combine the peach chunks, chopped plums, sugar, Clear Jel or pie thickener, cinnamon, and bourbon. Mix until the fruits are evenly coated. Divide the fruit mixture among four mason jars, filling each slightly above the rim since the filling will settle during baking.
In a separate bowl, combine the brown sugar, rolled oats, flour, and melted butter. Using a fork or your fingertips, blend the ingredients together until a crumbly texture forms throughout.
Spoon the oat crumble topping generously over the fruit mixture in each jar, distributing it evenly.
Arrange the filled mason jars on a baking sheet lined with aluminum foil to catch any drips. Place in the preheated oven and bake for 35 minutes, or until the crisp topping is golden brown.
Remove the cobblers from the oven and allow them to cool for several minutes before serving. This allows the fruit filling to set slightly while the cobbler remains warm.
