White Wine Mushroom Bruschetta with Halloumi

Ingredients
1 small baguette, cut into approximately 9 slices of 1 inch thickness
1 tablespoon olive oil
350g mixed mushrooms (white and chestnut), diced
2 cloves garlic, minced
100ml Chardonnay white wine
50ml single cream
200g halloumi cheese, cut into ½ cm slices
3 tablespoons fresh parsley, chopped
Salt to taste
Black pepper to taste
Directions
Heat the olive oil in a large frying pan over low heat. Add the diced mushrooms and minced garlic, cooking gently for 5 minutes until the mushrooms have softened and released their moisture. Pour in the Chardonnay and bring to a gentle simmer. Continue cooking for another 5 minutes, allowing the wine to reduce until only a light coating of liquid remains in the pan.
While the mushrooms are cooking, place the halloumi slices in a single layer in a separate dry frying pan over medium heat. Cook for approximately 5 minutes. As the cheese heats, it will release liquid; once this evaporates, the bottom will begin to turn golden brown. Carefully flip each slice and cook the second side for 2-3 minutes until it also develops a golden crust. Transfer to a plate.
Arrange the baguette slices on a baking tray and place under a hot broiler (grill) for 1-2 minutes per side until golden brown and crispy. Remove and set aside.
Once the wine in the mushroom mixture has reduced substantially, add the single cream and stir gently. Simmer for 2 minutes more until the sauce thickens and coats the mushrooms. Remove from heat.
Stir the fresh chopped parsley into the mushroom and cream sauce. Season with salt and a generous amount of black pepper to taste.
To assemble, place one slice of golden halloumi on each toasted baguette slice. Spoon the warm mushroom and cream mixture generously over the cheese. Garnish with additional fresh parsley if desired. Serve immediately while warm.
