Ingredients

1.17 cup Water

2 tablespoons Cornstarch

3 cloves Garlic cloves, minced

2 tablespoons Fresh red Thai chilies, finely chopped (with seeds for more heat)

⅔ cup Sugar

⅓ cup Rice vinegar

2 teaspoons Salt

Directions

  1. In a small saucepan, combine the sugar, rice vinegar, minced garlic, finely chopped red chilies, salt, and 1 cup of water. Stir well to dissolve the sugar.

  2. Place the saucepan over medium-high heat and bring the mixture to a gentle boil, stirring occasionally.

  3. While the sauce heats, whisk together the cornstarch and remaining 2 tablespoons of water in a small bowl until smooth and lump-free.

  4. Once the sauce is boiling, slowly pour the cornstarch slurry into the pan while stirring constantly to prevent lumps from forming.

  5. Continue stirring and simmer for 1–2 minutes until the sauce thickens and becomes glossy and translucent.

  6. Remove from heat and let cool slightly. The sauce will continue to thicken as it cools. Use warm or at room temperature, or refrigerate in an airtight container for up to 2 weeks.
