Ingredients

1/8 cup Old Bay seasoning

2 limes Juice from 2 limes (about 1/4 cup)

16 large shrimp, peeled and deveined with tails on

1/3 cup mayonnaise

1 tablespoon Dijon mustard

½ lime Juice from 1/2 lime (about 1.5 teaspoons)

2 teaspoons brown sugar

Water (for cooking)

Lime wedges (for serving)

Directions

  1. Fill a pot with water and bring to a simmer over medium heat. Stir in the Old Bay seasoning and the juice from 2 limes, blending until the seasonings are fully dissolved.

  2. Carefully place the shrimp into the simmering water. Maintain a gentle simmer and cook for 3 minutes, until the shrimp are opaque and cooked through to a minimum internal temperature of 145°F.

  3. Using a slotted spoon, transfer the cooked shrimp to a colander and rinse gently with cool water. Let them cool to room temperature, about 10 minutes.

  4. While the shrimp cool, prepare the dipping sauce. In a small mixing bowl, whisk together the mayonnaise, Dijon mustard, brown sugar, and juice from the 1/2 lime until smooth and well combined.

  5. Transfer the sauce to a small serving bowl and place it in the center of a large platter.

  6. Arrange the cooled shrimp around the sauce bowl in an attractive pattern. Scatter fresh lime wedges around the platter and serve immediately.

This is a solid Charlotte weeknight dish built on local coastal shrimp and common pantry items like Old Bay, mayo, and Dijon mustard—all easy finds at any Harris Teeter, Food Lion, or Kroger. The stated 45 minutes is honest for fresh shrimp prep and a quick lime-mayo sauce, and the small 2-serving size works for a couple or a quick dinner before other plans. The main limitation is that this does not reheat well; shrimp dries out overnight, making it strictly a same-night meal, and the portion is tight for a family of four.
