220g white flour
220g whole wheat flour
pinch pinch of salt
1 teaspoon baking soda
440ml buttermilk
Directions
Preheat your oven to 190°C (375°F).
In a large mixing bowl, whisk together the white flour, whole wheat flour, baking soda, and salt until evenly combined.
Using a spatula or wooden spoon, gradually pour the buttermilk into the dry ingredients, stirring gently. Add the buttermilk in stages rather than all at once, mixing until a shaggy dough forms.
Turn the dough out onto a lightly floured work surface and knead briefly and gently—just 2 to 3 turns—to bring it together into a round loaf. Avoid overworking the dough.
Place the dough round on a baking sheet. Using scissors or a sharp knife, carefully cut an X shape into the top of the loaf, about ¼ inch deep.
Bake for 40 minutes, or until the bread is golden brown on top. The bread is done when it sounds hollow when tapped on the bottom.
