1/2 pound Danish Blue Cheese

1/2 pound Aged Sharp Cheddar Cheese

3/4 cup Sesame Seeds

2 tablespoons Butter

Directions

  1. Toast the sesame seeds in a skillet over medium heat, stirring frequently for 3-4 minutes until golden and fragrant. Transfer to a plate and let cool slightly.

  2. Melt the butter in the same skillet over medium heat, then add the cooled sesame seeds and toss gently to coat. Spread on a shallow dish to cool completely.

  3. Remove both cheeses from refrigeration and bring to room temperature for about 10 minutes to soften slightly, making them easier to blend.

  4. Crumble the Danish Blue Cheese and cut the Aged Sharp Cheddar into small chunks. Combine both cheeses in a large bowl.

  5. Mix the cheeses together using a fork or pastry cutter, breaking them down until they form a cohesive, crumbly mixture that holds together when pressed.

  6. Using a small ice cream scoop or measuring spoon, form the cheese mixture into balls approximately 1 inch in diameter. Work quickly and chill between batches if the mixture becomes too soft.
